Thyme, oregano and malotira grow wild between the rocks of the Cretan mountains, scented by sun and sea wind.
02 — The hives
Honey from wild thyme
Beekeepers move their hives with the bloom, from the coast in spring to the high plateaus in summer. The honey is spun cold and left raw.
03 — The groves
Oil from ancient trees
Olives picked early and pressed within hours give an oil that is green, peppery and alive.
04 — The drying room
Dried in the shade
Herbs are bundled by hand and dried slowly out of the sun, so they keep their colour, oils and aroma.
